Make sure your hands are nice and clean. Lay a sheet of filo onto the work surface. Brush melted butter all over the pastry, making sure you get right to the edges.
Lay another sheet on top and brush with more melted butter. Repeat until you have as many layers as you need. We ‘re using 4.
Pile your filing into the middle. Carefully lift up the sides to wrap the filling, trying not to tear the pastry.
Squeeze to close the top and cover the filling completely. Brush the outside with more melted butter before placing on a lined baking tray for cooking.
