Chicken Kabse Recipe
Kabse or kabsa is the national dish of Saudi Arabia, which consists of rice, spices, vegetables, and lamb or chicken, it is VERY spicy and extremely delicious.
TOTAL TIME 2 hrs | PREPARATION TIME 1 hr | SERVES 6
INGREDIENTS
2 chickens, cleaned and cut in small pieces
2 large onions, finely chopped
2 carrots, grated
1 tomato, diced
Condiments (dry lemon, cinnamon, cumin, sheeba, khalanjan, cloves, whole cardamom)
2 tsp kabsa spices
2 cups long rice, washed and soaked
2 tbsp tomato sauce
2 tbsp raisins
DIRECTIONS
1 Wash chicken pieces well with water and salt and leave aside
2 Fry onions until golden then add in condiments, tomato sauce, carrots, tomato dices and raisins then stir
3 Add chicken pieces and leave until they get a slightly golden color
4 Cover chicken with water and leave to simmer for half an hour
5 Add rice and salt to taste and leave to cook
6 Leave rice to rest between 5 and 10 minutes then transfer into the serving dish
7 Serve with yogurt and hot tomato sauce.
