Lebanese potato salad is light and fresh with lemon and mint–the perfect, healthy summer salad which is dairy- and gluten-free.
Ingredients:
5 lb Potatoes
1 cup Olive oil
1 cup Lemon juice
1 bn Chopped parsley
2 bn Chopped scallions
1 bn Chopped fresh mint
Salt, to taste
1 dsh Cinnamon
Preparation:
Boil the potatoes until firm, peel when cooled and cube potatoes and add the oil to coat. Add the rest and toss. Place in a large bowl and garnish with radishes, cherry tomatoes, and fresh mint.
