Ingredients
for 4 servings
2 onions (finely diced)
1 clove garlic (finely diced)
2 red chile peppers (chopped)
1 red pepper (diced)
½ cup chopped peanuts
2 tablespoons olive oil
⅞ cup fish stock
2 tomatoes (peeled, deseeded and chopped)
1 tablespoon caper (chopped)
1 tablespoon lemon juice
4 fish fillets approx. 160 g each (e. g. cod)
cumin (ground)
cilantro (to garnish)
Preparation
Step 1 Fry the onions, garlic, chillies, pepper and peanuts in oil in a hot frying pan for 2-3 minutes. Deglaze with the stock and bring to the boil.
Step 2 Add the tomatoes and capers, season with lemon juice, salt and ground black pepper and simmer gently for around 10 minutes.
Step 3 Add the fish to the sauce. Turn down the heat, cover and cook for 6-8 minutes until just cooked; do not boil.
Step 4 Season to taste with salt, ground black pepper, lemon juice and cumin and serve garnished with coriander.
