Ingredients
50g leg lamb, chopped
1/2 cup grated pizza cheese
1/2 cup pitted kalamata olives, chopped
2 tablespoons chopped fresh oregano leaves
2 tablespoons pizza sauce
8 sheets filo pastry
50g butter, melted
Method
Preheat oven to 180°C/160°C fan-forced. Combine ham, cheese, olives, oregano and sauce in a bowl. Place 1 pastry sheet on a flat surface. Brush with butter. Top with 1 pastry sheet. Cut into 3 long strips. Cover remaining pastry with a damp tea towel so it doesn't dry out.
Place 1 tablespoon ham mixture in 1 corner of pastry. Fold over diagonally to form a triangle. Continue folding, retaining triangle shape. Place on tray lined with baking paper. Repeat with remaining pastry, butter and ham mixture. Brush with remaining butter. Bake for 10 to 12 minutes or until golden and crisp. Serve.
Notes
Frozen pastry should be partially thawed before using.
