The best Turkish lamb döner shawarma complete with the pita bread and sauces

Ingredients 

Shawarma Meat:

(500 grams) minced lamb

(120 grams) grated onion

(30 grams) yogurt (2 tablespoons)

(15 grams) grated garlic (1 tablespoon)

(1 teaspoon) paprika

(1 teaspoon) oregano

(1 teaspoon) thyme

(1 teaspoon) chili flakes

(1 teaspoon) salt

(1/2 teaspoon) black pepper

Shawarma Pita Bread:

(450 grams) all-purpose flour (3 cups)

(8 grams) salt (1 teaspoon)

(320 ml) warm milk (1 and 1/3 cups)

(30 grams) olive oil (2 tablespoons)

(15 grams) yeast (1 teaspoon)

(5 grams) sugar (1/4 teaspoon)

White Sauce:

(120 grams) yogurt (1/2 cup)

(60 grams) mayonnaise (1/4 cup)

(5 grams) dried parsley (1 tablespoon)

(5 grams) garlic cloves (2 cloves)

(5 grams) dried mint (1 tablespoon)

Salt and black pepper to taste

Hot Sauce:

(3 tablespoons) red chili powder

(1 tablespoon) chili flakes

Salt to taste

(60 ml) vinegar (1/4 cup)

Sumac Salad:

(200 grams) onion

(10 grams) parsley (1/4 cup)

(5 grams) sumac (1 tablespoon)

Salt and black pepper to taste

Instructions

Shawarma Meat:

1. Combine minced lamb, grated onion, yogurt, grated garlic, paprika, oregano, thyme, chili flakes, salt, and black pepper in a mixing bowl.

2. Shape the meat mixture into a roll using plastic wrap.

3. Freeze the meat roll overnight.

Shawarma Pita Bread:

1. Mix all-purpose flour, salt, warm milk, olive oil, yeast, and sugar in a kneading bowl.

2. Knead the dough for 10 minutes until soft.

3. Let the dough rest and double in size for an hour.

4. Divide the dough into six pieces and flatten each into pita bread size.

5. Place the dough on a baking pan with parchment paper.

6. Bake at 500°F (250°C) for 5-6 minutes until soft and fluffy.

White Sauce:

1. Mix yogurt, mayonnaise, parsley, garlic, dried mint, salt, and black pepper in a bowl.

2. Refrigerate until serving.

Hot Sauce:

1. Combine red chili powder, chili flakes, salt, and vinegar in a bowl.

2. Refrigerate until serving.

Sumac Salad:

1. Mix onion, parsley, sumac, salt, and black pepper in a salad bowl.

2. Refrigerate until serving.

Cooking the Shawarma:

1. Slice the frozen meat roll into thin slices vertically or horizontally.

2. Sear the shawarma slices in a pan with a bit of vegetable oil.

3. Assemble the Shawarma Sandwich:

4. Make a sandwich using the freshly baked pita bread, shawarma slices, sumac salad, lettuce, pickles, and top with white and hot sumac
