Makes 3 cups
Ingredients (serves 8)
250g spreadable light cream cheese
250g smooth low-fat ricotta cheese
1/3 cup corn relish
2 tablespoons sweet chilli sauce
1 Lebanese cucumber, grated
Steamed broccoli florets, celery trees and carrot trees, to serve
Method
Whisk cream cheese and ricotta together in a bowl until smooth. Stir in corn relish, sweet chilli sauce and cucumber. Spoon into bowl. Top with vegetables. Serve.
Notes
To make trees, cut broccoli into small florets. Place in a heatproof bowl. Cover with boiling water. Stand for 2 minutes. Drain. Refresh in a bowl of iced water. Cut carrots and celery stalks into sticks. Cut halfway along each stick into 3mm strips. Place into a bowl of iced water. Refrigerate for 30 minutes or until curled.
