Turkish Zucchini Fritters Recipe

Turkish Zucchini Fritters

Cooking time less than 30 minutes
serves 4


500g (about three large) zucchini, grated
2 shallots, sliced
1 cup self raising flour
100g fetta crumbled
2 eggs, lightly beaten
1½ tablespoon chopped dill
1 teaspoon hot paprika
½ teaspoon chilli powder
½ teaspoon ground black pepper
pinch of salt
oil for shallow frying


Squeeze the grated zucchini to remove any excess moisture.

Place zucchini, shallots, flour, fetta, eggs, dill, paprika, chilli powder, ground black pepper and salt in a bowl. Mix well. Shape into patties (about 2 tablespoons worth).

Heat oil until a piece of bread browns in 15 seconds. Add patties and cook for 5 minutes, turning halfway, or until browned and cooked through

Drain and serve hot or cold.
