Step 1: Melt chocolate. Line a baking tray with non-stick baking paper.
Step 2: Use a truffle dipper or two forks to dip a truffle in melted chocolate to coat. Remove the truffle, tapping the dipper handle or forks gently on the edge of the bowl to shake off any excess chocolate.
Step 3: Place truffle on the lined tray. Repeat with remaining truffles. Place aside to set.
Hint & tips
Couverture and eating chocolates need to be "tempered" before being used for coating, dipping or piping. This ensures the chocolate resets and has a glossy finish.
Place the chocolate in a heatproof bowl over a saucepan of simmering water until it melts and reaches 45°C on a sugar thermometer.
Place the bowl inside a bowl of cold water. Stir until the chocolate thickens and the temperature drops to 27°C.
Return the bowl to the saucepan of simmering water and stir until the chocolate reaches 32°C.
