Zucchini stuffed with meat, fried and cooked with lemon juice. Traditional and delicious Middle Eastern main dish.

Ingredients

1 Kg small size zucchinis
1 Kg minced lamb or minced beef
3 tbsp vegetable oil
Salt and black pepper to taste
2 juice lemon
1 teaspoon salt
Vegetable oil for frying zucchini
Water for cooking

Garnish
 
1/4 cup pine nuts, fried
1/4 cup almonds, fried

Preparation

Clean zucchinis, wash and core them.

In a medium saucepan, heat vegetable oil. Add minced meat and season with salt, and black pepper stirring until all liquid runs out.

Heat oil and fry the zucchinis until slightly golden. Remove from frying oil and drain on kitchen paper towels. Set aside.

In a saucepan, boil the zucchinis in a salted water for 10 minutes.

Add lemon juice and salt.

Place the zucchinis in a serving dish and garnish with fried almonds and pine nuts.

Serve hot with Vermicelli Rice.
