Cooking time: 40 minutes serves: 6-8

Ingredients

Dough:
3 cups all-purpose flour
1 1/4 cups water
1/2 tsp salt

For frying:
Corn oil

To serve:
Pickle, arugula, green onions

Lentils:
2 cups brown lentils
2 tsp salt
1/2 cup soaked tamarind
3 tbsp lemon juice
1/2 cup olive oil
6 medium onions, thin slices
3 package green coriander, chopped
6 garlic cloves, crushed
1/2 cup olive oil
3 pita bread, cut into small pieces
1 pomegranate molasses

Directions

1. Dough: In an electric mixer bowl, add 2 1/2 cup of flour, water, salt . Process on low speed until combined.

2. Cover the dough with plastic wrap and let it rest for 20 minutes.

3. Divide the dough into 8 parts.

4. On a floured surface, roll out each dough part to become 1/4 cm thick then slice it into long strips (like fettuccine) and then into small squares.

5. To cook lentils: Place the lentils in a large saucepan, add water and salt, let it cook over medium heat (covered) for about 20-30 minutes.

6. Add the tamarind and lemon juice to lentils and stir until it boils.

7. Add the dough square gradually, stirring from time to time until the lentils are done.

8. In a deep frying pan, add oil and fry pita bread pieces until it becomes golden brown. set a side.

9. In the same oil, fry the onion until it becomes dark golden. Add half of it to the lentils and stir. Keep the remaining onions for garnishing.

10. Add half of the garlic to lentils.

11. Put the rest of the garlic and coriander in a dish and mix.

12. Pour lentils in a large serving dish, heat the olive oil, then spread over lentils.

13. Garnish lentils with the fried bread, garlic, coriander, fried onions and pomegranate molasses.

14. Serve immediately or cold with pickles, arugula and green onions.
