Maamoul

Maamoul, is a shortbread pastries filled with pistachios, walnuts and dates that you won’t stop eating!

Preparation Time: 1 day approximately
Cooking Time: 30 minutes approximately
Serves: 12 persons

All you need

27 g butter
1 cup all purpose flour
2 cups semolina
1/4 tsp salt
1/4 tsp al alali Baking Power
1/4 cup granulated sugar
2 tbsps rose water
1 tbsp orange blossom water
7 tbsps water

Date filling:
1 1/2 cups chopped dates
6 tbsps butter

Directions
  1. In a pot, Cook dates with butter over low heat for 15-20 minutes or until pureed. Set aside to cool
  2. Melt butter, set aside to cool slightly
  3. In a bowl, mix flour, semolina, salt, al alali Baking Powder and sugar
  4. Add melted butter to the dough, mix until soft. Cover bowl and set aside for overnight
  5. Mix rose and orange blossom water with 7 tbsps water, sprinkle over the dough and mix
  6. Knead for 12 -15 times or until dough is smooth
  7. Dust maamoul molds with flour
  8. Estimate the amount of dough need to fill maamoul mold and make a ball of dough
  9. Flatten slightly and put a tbsp of dates in the center
  10. Close dough around filling, place the ball into mold
  11. Tap cookies out and transfer to baking sheet with a spatula
  12. Bake at 160 325 °F) for around 12 minutes, or until barely colored, set aside to cool
  13. Serve and enjoy!
