Grilled Shrimps Salad With Citrus And Beets Recipe
Preparation Time: 25 minutes approximately
Cooking Time: 15 minutes approximately
Serves: 4 persons
All you need
250g shrimps medium size
To marinate shrimps:
1 tbsp parsley – chopped
1 clove garlic – crushed
1 tbsp lemon juice
al alali Ground Black pepper to taste
Salt to taste
1 tbsp al alali Extra Virgin Olive Oil
For salad:
1 cup small fresh spinach leaves
1 cup lettuce US assorted
1 cup arugula
2 cucumbers – cut into cubes
1 medium grapefruit – sliced
3 tbsp al alali Diced Beets – drained
1/4 cup orange juice
1 tbsp lemon juice
1/2 cup Diced colored pepper
1/2 green apple – cut into cubes
1/2 cup granulated pomegranate
Salt to taste
al alali Ground Black Pepper to taste
1 tbsp al alali Extra Virgin Olive Oil
Directions
Wash shrimps well. In a deep dish, mix marinade ingredients on shrimp and leave for 20 minutes to take the distinctive flavor
In a deep pot, heat 1 tbsp al alali Extra Virgin Olive Oil, add shrimp, one after the other, cook for 5 minutes, then flip to the other side. Allow to cook for 5 more minutes until change in color, set aside
In a small bowl, mix orange, lemon juice, al alali Extra Virgin Olive Oil, salt and al alali Ground Black Pepper , set aside
In serving plate, cut vegetables in medium size then add lettuce, arugula, spinach leaves and al alali Diced Beets
Add shrimps on top with grapefruit, apples and pomegranate grains, then add the orange juice mixture
Serve and enjoy!
