Mediterranean Grilled Cheese Skewers Recipe
These vegetarian kebabs bring European flavors to the grill.

INGREDIENTS
1/4 c. red wine vinegar
1 green onion, finely chopped
1/2 tsp. sugar
4 tbsp. extra-virgin olive oil
24 pitted green olives
24 grape tomatoes
2 blocks (8 oz. each) halloumi cheese
DIRECTIONS
1. Heat grill to medium-high. Whisk together vinegar, green onion, sugar, 1 tablespoon olive oil, and 1⁄4 teaspoon each salt and pepper. On each of 12 soaked small bamboo skewers, thread 2 olives and 2 tomatoes. Brush with 1 tablespoons oil. Grill 5 minutes or until slightly charred, turning once.
2. Cut cheese into 8 slices; brush with remaining 2 tablespoons oil. Grill 2 to 4 minutes or until grill marks appear, turning over once with thin metal spatula. Transfer cheese to cutting board; cut each slice into 3 chunks. Thread onto skewers with olives and tomatoes.
3. To serve, spoon vinaigrette over skewers.
