Cooking a special and delicious Arabian lamb and rice recipe (Majboos!)

Ingredients and step by step instructions for making the recipe

Start first be preparing the meat

In a pot or pan sear one kilogram of  lamb or goat meat with bones in a little bit of vegetable oil 

Once the meat is seared from all sides add the following ingredients:

Onion (120 grams)

One tsp each of coriander, cardamom, and cloves, and half a tsp of black pepper, and one star anise 

Cinnamon stick and bay leaves and dried lemon

Cover the meat with hot water

Boil the meat over medium heat for one hour or until it is full cooked


How to prepare the split chickpeas and raisins garnish:

First step for the garnish:

In a pan, add one and a half cups of washed and soaked split chickpeas

It was soaked for 20 minutes

Starin the water and cover it with fresh cold water

Boil it for 15 minutes


Prepare the saffron water 

Add one tsp of saffron into a small bowl 

Pour one fourths of a cup of water

Add one tsp of rose water (optional)

Let it soak until time of use


Second step for the garnish:

In a separate pan, add chopped Onion (400 grams)

Fry the onion without cooking oil

Add a little bit of water and keep stirring it until the onion caramelizes

Then, add one tbsp of butter or ghee

Strain the split chickpeas and add it to the caramelized onion

Add half a cup of soaked raisins

One tsp of salt, and one fourth of a tsp each of cardamom, cloves, and dried lemon

Add a little bit of the saffron water

Remove it from the heat and set it aside for later


After the one hour has past, go back to the meat

Add salt to taste

Let the meat boil with the salt for another 10 minutes

Take out the meat from the pot

Add a sprinkle of cardamom on the meat

Brush the meat with some of the saffron water

Broil the meat in the oven to got a golden color


Strain the meat broth to use it in making the rice

In a pot, add a little bit of vegetable oil

Add the following

Two cups of washed and soaked basmati rice

Half a tsp of salt, and one fourth of a tsp each of cardamom and cinnamon

Add three cups of the meat broth

Cook it over high heat until the amount of water decreases

Add the split chickpeas and raisins on top 

Add the rest of the saffron water

Cook  the rice over low heat for 25 minutes

Take the split chickpeas out

Take the yellow rice out

Pour the rice into a serving tray

Decorate the rice with the yellow part of the rice and the split chickpeas and raisins garnish

Add the meat onto and enjoy a delicious meal
