Nummoora

Nummoora is a Lebanese pastry made from semolina soaked in a flavored sugar-syrup and decorated with almonds. 

Makes: 15 slices | Cooking time: approx 50 minutes.

Ingredients

2 ½ cups semolina
2 cups yoghourt
½ cup sugar
¼ lb (125g) butter, melted
1 teaspoon baking powder
2 cups cool Ater (syrup)

Preparation

Mix together the semolina, yoghourt, sugar, butter and baking powder. Spread the mixture evenly in a well greased 25 cm (10 in) baking tray and bake in a 350oF (180oC) oven until cooked through and lightly brown on top – approx 50 minutes.

Remove from the oven and while still hot cut diagonal lines through the cooked mixture to make diamond-shaped slices, and then pour the cool Ater (syrup) over the top.

Serve hot or cold, either by itself or with Ushta or whipped cream.

Variation:
Substituted ½ cup desiccated coconut for ½ cup of the semolina. Decorate each piece with an almond.

  1. Atter is "sugar syrup", to prepare it, you will need:

    2 cups sugar or 400 g
    1½ cups water or 375 ml
    1 teaspoon lemon juice
    1 tablespoon rose water

    Place sugar and water in a saucepan, bring to boil and simmer for 6-8 minutes, then remove from heat and stir in lemon juice and rosewater.

    1. It does not have to be Greek yogurt. You can use any other plain yogurt. My mom has been making numoura for years and she uses plain yogurt.
