Delicious chicken with rice and vegetables
Ingredients
Chicken breast (600 grams)
Two tbsps of vinegar
One tsp each of salt, cumin, paprika, dried parsley, and a half a tsp each of black pepper and red chili pepper flakes
Cooking oil
Olive oil
Onion (120 grams)
One tbsp of garlic
Bell peppers (100 grams)
Mixed vegetables (300 grams)
One tsp each of salt, cumin, paprika, red chili flakes, and black pepper
One cup of hot water
Cardamom and cloves
Cinnamon stick
Bay leaves
Two cups of washed and soaked basmati rice
One tsp of salt
Three cups of water
Saffron (optional)
Parchment paper
Step by step instructions for making the recipe:
1. Add cut up chicken breast about (600 grams) in a mixing bowl and marinate it with the following ingredients:
- Two tbsps of vinegar
- One tsp each of salt, cumin, paprika, dried parsley, and a half a tsp each of black pepper and red chili pepper flakes.
2. Sear the chicken breast in a pot with a little bit of cooking oil
3. Cook over high heat
4. Once cooked, remove the the chicken from the pot and set it aside
5. In the same pot, add a little bit of olive oil and add cook the following ingredients:
- Onion (120 grams)
- One tbsp of garlic
- Bell peppers (100 grams)
- Mixed vegetables (300 grams)
- One tsp each of salt, cumin, paprika, red chili flakes, and black pepper
- One cup of hot water
6. Cook on medium heat for 10 minutes
7. Add back the chicken
8. Cook on low heat for 10 minutes
9. Prepare the rice by adding a little bit of cooking oil into a pot and also add:
- Cardamom and cloves
- Cinnamon stick
- Bay leaves
- Two cups of washed and soaked basmati rice
- One tsp of salt
- Three cups of water
10. Cook on high heat until the amount of water decreases
11. Add a little bit of saffron if available
12. Cook on low heat for 25 minute

13. In a baking pan, place a piece of parchment paper and stack the chicken and vegetables in this order:
- Chicken
- Vegetables
- Rice
14. Flip it onto a serving tray
