Shakshouka

Shakshouka

Shakshouka is a simple Middle Eastern dish made of cooked tomatoes, peppers, garlic or onions, spices and eggs.

Shakshouka is typically eaten with a pita, like many other Middle Eastern dishes.

Ingredients:

1 onion
2 tablespoon oil
4-5 plum tomatoes
2 eggs
1 teaspoon basil
Salt, pepper, cayenne pepper, paprika, turmeric to taste

Preparation:

1. Peel & chop the onion and fry it in oil until it turns translucent.
2. Chop the tomatoes and add to the onion in the pan.
3. Add herbs and spices.
4. Cook until the tomatoes are evenly cooked through.
5. With a wooden spoon, make two holes in the onion-tomato mix.
6. Break and pour each egg into its own hole.
7. Cover and let cook until the eggs are firm.
8. Serve with pita or other bread.
