Beef Tartar (Kibbe Nayeh) Recipe

Kibbe Nayeh in a plate

Kibbe Nayeh is raw, spiced beef mixed with bulgur wheat and eaten smeared on pita bread with veggies and extra-virgin olive oil.

Ingredients

[1/2] cup bulgur wheat, grind #1
1 cup warm water
[1/4] cup toasted walnuts
3 fresh basil leaves
2 TB. fresh parsley, chopped
[1/2] medium white onion, chopped
[1/2] large red bell pepper, ribs and seeds removed, and roughly chopped
1 tsp. crushed red pepper flakes
1 tsp. paprika
1 tsp. salt
[1/2] tsp. ground black pepper
[1/4] tsp. ground cloves
[1/4] tsp. cumin
[1/4] tsp. ground cinnamon
[1/2] tsp. dried ground sage
[1/4] tsp. ground allspice
[1/4] tsp. ground nutmeg
[1/4] tsp. ground coriander
[1/2] lb. lean ground chuck beef
3 TB. extra-virgin olive oil

Directions

In a medium bowl, combine bulgur wheat and warm water. Set aside for 30 minutes.

In a food processor fitted with a chopping blade, blend bulgur, walnuts, basil, parsley, white onion, and red bell pepper for 1 minute.

Add crushed red pepper flakes, paprika, salt, black pepper, cloves, cumin, cinnamon, sage, allspice, nutmeg, and coriander, and blend for 30 seconds.

Add ground chuck, and blend for 1 minute.

Spread meat mixture on a plate, drizzle extra-virgin olive oil on top, and serve with pita bread and fresh vegetables.
