Namoura Recipe - How to Make Namoura

Number of servings: 6 


2 cups semolina or farina
2 cups sugar
1 teaspoon baking soda
72 blanched almonds
1 tablespoon butter
2 cups yoghurt: alrai yoghurt
1 cup coconut
2 tablespoons tahini 


Grease a 9x13 baking pan with tahini to avoid sticking.

Put all ingredients (except maple syrup) together in a bowl and blend until the batter is smooth.
Spread the batter smoothly and flatly into the pan.

Place almonds to cover the surface. Bake in oven for 250 degrees for one hour. Check after 45 minuter, should be a light golden brown.

Let the Namoura cool for 10 minutes before pouring one cup of maple syrup over the pan.

With a watered knife, cut the namoura with evenly spaced diagonol lines across the long end and then across the short end to create diamond shaped pieces.
Be sure to cut around the almonds if possible so that each piece has one almond in the center. Also, when cutting, use an up and down motion as you would cutting a cake.

    You write the following under preparation "Put all ingredients (except maple syrup).
    There is NO Maple syrup in the list of Ingredients.
    Is it possible at we should make maple syrup out of something from the Ingredients?
    Would like to try it but I'm confused!

    1. Thanks for your note. Your are right, the maple syrup is not included in the ingredients. So, remove (except maple syrup) from the second step.

      To make the syrup, follow this recipe:

      Syrup ingredients:

      3 cup Sugar
      2 cup Water
      Some Drops of Freshly Squeezed Lemon
      Drops of Orange Blossom or Vanilla Extract


      To make syrup add sugar to the boiling water in sauce pan add lemon drops and orange blossom or vanilla let the mixture boil for 5 min, then let it cool down in room temperature.

    2. Maple syrup comes from a maple tree, the syrup you wrote ingredients for is a 'simple syrup' flavored with orange or vanilla.

  3. I didn't read the entire recipe beforehand so the almonds ended up in the batter instead of on top. Delicious anyways, I love orange blossom extract. I used fine semolina, would it be better with extra-fine or coarser semolina?

    1. It's better with Coarse semolina. Enjoy!
