Meatball sub

Save time with this speedy flavour-packed sub.


1 tbs olive oil
300g pre-cooked fresh or thawed frozen meatballs
4 ciabatta or crusty bread rolls
8 cheddar cheese slices, halved
250ml (1 cup) tomato pasta sauce
2 cups baby spinach leaves
1/4 cup fresh small basil leaves


Preheat a grill on high. Heat the oil in a large non-stick frying pan over medium-high heat. Add the meatballs and cook, shaking the pan often, for 3-4 minutes or until the meatballs brown slightly.

Meanwhile, split the rolls in half. Place 2 cheese halves on the bottom half of each roll. Toast under the grill for 1-2 minutes or until cheese melts. Divide roll bases among serving plates.

Pour sauce over meatballs. Cook for 1 minute to heat through.

Add the spinach leaves to the roll bases. Top with meatballs and sauce. Top with 2 more cheese halves and the basil leaves. Sandwich with the roll tops.
