MUTABAQ


Mutabaq, Mutabak or Martabak is a street food which originated in southern Saudi Arabia and Yemen and its name in Arabic (مطبق) means “folded"

It has many variations, including a sweet and a savoury version.

INGREDIENTS

Dough ingredients:

3 cups of flour

100g Lurpak Unsalted Butter

1 teaspoon of salt

1/2 small spoon of baking powder

1 egg

1 cup of water

Stuffing ingredients: 

Half kilo minced meat

1 onion - chopped

1 clove of garlic

4 eggs

1 teaspoon of salt

1 teaspoon of black pepper

1 small spoon of mixed spices

1/2 teaspoon of cumin

Carrots

Green peas

Sauce ingredients:

3 tablespoons of yogurt

1 clove of garlic

1 teaspoon of mint

Juice of half a lemon

PREPARATION

Pre-heat the oven to180C degrees)

Sift the flour into a large bowl, then add the salt and baking powder,egg and butter. mix all together and gradually add water until the dough is sticky. Cover it and leave it aside for 1 hour.

Heat the butter in a pan, add the mincemeat and brown, then add onion, garlic, salt, black pepper, spices and mix all together.

When it's cooked, add the cup of shredded carrots, half a cup of green peas, coriander and mix till they are all cooked.

Add the beaten egg and mix all the ingredients very well for 1 minute .

Roll out the dough on a clean table with some flour, make sure its thin.

Put the stuffing on the dough, close it to shape an envelope, repeat till your dough is finished

Heat Lurpak butter and spread it on a cooking tray.

Put the Mutabaq envelopes on the tray (making sure that there is enough space between each one) and brush with butter.

Bake for 5 min only or till its color changes, flip the Murtabak to the other side and cook for another 5 min until golden.

Combine yogurt, minced garlic and chopped mint and mix. Then add lemon juice and mix.
