Egyptian Moammar Baked Rice

Egyptian Moammar Baked Rice

Muammar rice is one of the authentic, traditional Egyptian rice dishes.  Creamy, spicy baked rice with a golden brown crust

1 1/2 cup short-grain rice
1 small onion, finely chopped
1 tsp salt
1 pinch of black pepper
1/4 tsp cinnamon
2 cups low-fat milk
1 cup chicken broth
2 tbsp butter
2 tbsp whipped cream

To Serve:

1. Soak the rice in water for about 15 minutes, strain.

2.  Preheat the oven to 350 F. Grease an oven dish or (Pyrex) with butter.

3. Rub the onions with salt, pepper and cinnamon until the onion is withered. Mix with the rice, then put the mixture in the oven dish.

4. In a saucepan, boil the milk, chicken broth, butter and cream, then pour over the rice. Cover and bake in the oven 25-30 minutes until rice dries and liquid is absorbed.

5. Garnish with cinnamon and serve hot.
