Levant meat and rice

Ingredients and step by step directions

Preparing the meat:

Use lamb or goat meat with bones (One kilogram)

Season the meat with the following spice mix:

One tsp each of salt, cumin seeds, coriander seeds, paprika, and half of a tsp each of black pepper and turmeric

Fry the meat in a little bit of vegetable oil

Add bay leaves, cinnamon sticks, cardamom, and cloves

Add chopped onions (150 grams) and Garlic (20 grams)

Cover the meat with hot water

Cook over medium heat for one hour

Then, take out the meat from the pot

Strain the broth

Set the broth aside and use it for the rice

Preparing the rice

In a cooking pot add:

Vegetable oil

Fry one cup of carrots and take it out of the pot once fried

In the same pot, fry the vermicelli (100 grams)

Then, add two cups of washed and soaked basmati rice

One tsp each of cumin, coriander, paprika, and black pepper, and half a tsp cinnamon, cardamom, turmeric

One tsp of salt

Add four cups ofthe meat broth

Use one and half cups of water for each cup of rice

Cook over high heat until the amount of water decreases

Add one cup of canned sweet peas

Add the fried carrots

Cook over low heat for 25 minutes

Mix everything up

Turn off the heat and let the rice cool down for a little bit

Preparing the dough

Add the following ingredients into a kneading bowl:

Two cups of all purpose of flour

Half a tsp of baking powder

Half a tsp of salt

Two thirds of a cup of water

Two tbsps of vegetable oil

Knead the dough until you get a consistent texture

Cover the dough and let it rest for a half an hour

Final steps:

Brush an oven safe pot with butter

Decorate with almonds

Put it in the refrigerator for 5 minutes so that the almonds stick to the butter

Flatten the dough

Lay the dough in the pot

Add half of the rice batch

Then, add the meat

Add the rest of the rice

Cover the rice with the dough

Brush with ghee or butter

Put it in a preheated oven

Bake for 25 minutes at an oven temperature of 400°f, 200°c.

Flip it onto a serving tray
