Couscous
What is Couscous?
Couscous or kuskus (called maftoul in Jordan, Lebanon and the Palestinian Territories), is a food of the Moroccan, Algerian, Tunisian and Libyan. Couscous, a small type of pasta, made of semolina, flour, salt, and water. Similar to rice in shape, color, and texture, it is used in many dishes as rice would be. A grain of couscous is similar in size to a grain of sugar.
Couscous does not have much of a flavor itself. Thus couscous dishes are made with flavored stocks, herbs, and spices, with vegetables, dried fruits, nuts, and/or meat added or used as a topping.
