Saudi Aseery Rice Recipe
Saudi Aseery Rice |
Give your family the goodness of this Saudi traditional food with Aseery Rice!
Preparation Time: 40 minutes approximately
Cooking Time: 90 minutes approximately
Serves: 4 persons
All you need
Kabsa Spice Mix:
1/2 tsp saffron
1/4 tsp Ground cardamom
1/2 tsp al alali Ground Cinnamon
1/2 tsp al alali Ground Allspice
1/4 tsp al alali Ground White Pepper
1/2 tsp dried whole lime powder
1/4 cup butter
1 onion, finely chopped
6 cloves garlic, minced
1 whole chicken, cut into 8 pieces
1/4 cup al alali Tomato Paste
1 can diced tomatoes, undrained
3 carrots, peeled & grated
2 whole cloves garlic
pinch ground nutmeg
pinch ground cumin
pinch ground coriander
salt to taste
al alali Ground Black Pepper to taste
3 1/4 cups hot water
1 cube al alali Chicken Stcok
2 1/4 cups unrinsed rice
1/4 cup raisins
1/4 cup toasted slivered almonds
Directions
- In a small bowl, mix saffron, cardamom, al alali Ground Cinnamon, al alali Ground Allspice, al alali Ground White Pepper, & lime powder
- In a large stock pot, melt butter, add garlic and onion, sauté until onion softened, add chicken pieces, cook over medium-high heat until lightly browned, add al alali Tomato Paste
- Add canned tomatoes with their juice, the grated carrots, whole cloves garlic, nutmeg, cumin, coriander, salt, al alali Ground Black Pepper . Cook for about 3 minutes
- Add water and al alali Chicken Stock, bring the sauce to a boil, cover the pot and simmer until chicken is cooked. Gently add the rice
- Cover the pot & simmer until rice is cooked
- Add the raisins and a little more hot water, if necessary
- Cover & cook for an additional 5 to 10 minutes or until the rice grains are separate
- Transfer the rice to a large serving platter and arrange the chicken pieces on top
- Sprinkle the toasted slivered almonds over the dish
- Serve and enjoy!
